I make soup and freeze it, and it tends to taste better once it's defrosted and heated again than it was the day I made it.

My mother had a recipe for chocolate chip bars that tasted quite a bit better after they spent 2 weeks in an airtight container.

I rarely get to freeze soup anymore--it gets eaten before then. But yeah, good soup improves with "waiting."
